As the concept of the meat restaurant Bryanskiy Byk (translated as "the bull of Bryansk") we chose the cuisine of the Bryansk region, which is an excellent example of the modern Russian cuisine in its development: it has preserved many traditional Russian and Soviet dishes, and is supplemented with interesting regional features. We offer reliable Russian classics in author's serving and we prepare it exclusively from the high quality Russian products from different regions.

For steaks we use traditional Prime meat cuts, as well as alternative cuts from the Bryansk region. Additionally, the meat is kept in a dry aging chamber.
